Apple and spice bread pudding is easy to cook and a great make-ahead dish when you’re entertaining. Serve warm from the oven with ice cream for a delicious dessert.
2 tbsp (30 mL)butter or margarine
2 medium apples, peeled, cored and chopped
3 cups (750 mL)cubed day old white or whole wheat bread
1/2 cup (125 mL)raisins or dried cranberries
2 cups (500 mL)milk (1%)
1/3 cup (75 mL)packed brown sugar
1 tsp (5 mL)vanilla extract
1/2 tsp (2.5 mL)ground cinnamon
1/4 tsp (1.25 mL)ground nutmeg
Preheat oven to 350°F (180°C).
Melt butter in saucepan or skillet over medium heat. Stir in apples. Cover and cook over medium heat, stirring occasionally, until slightly softened, about 5 minutes.
Spray shallow 1-1/2-quart (1.5 L) baking dish with cooking spray. Combine apples, bread cubes and raisins in dish.
Whisk eggs, milk, brown sugar, vanilla, cinnamon and nutmeg in medium bowl until sugar is dissolved. Pour over apple mixture. Cover and refrigerate for 2 hours or overnight.
Bake pudding in preheated 350°F (180°C) oven until knife inserted in centre comes out clean, 45 to 55 minutes. Serve hot, warm or chilled.
Serve pudding with ice cream and/or maple syrup.
